  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 1 red bell pepper, sliced
  • 1 cup sliced mushrooms
  • 1 cup frozen mixed vegetables
  • 1 pound uncooked shrimp, peeled and deveined
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • 1 teaspoon grated ginger
  • 1/4 teaspoon black pepper

Instructions:

  1. In a medium saucepan, bring 2 cups of water to a boil.
  2. Stir in the wild rice mix and reduce the heat to low.
  3. Simmer the rice mix for 45 minutes, or until the rice is tender and the water is absorbed.
  4. Heat the olive oil in a large skillet or wok over medium-high heat.
  5. Add the onion, bell pepper, mushrooms, and mixed vegetables and stir-fry for 2-3 minutes, or until the vegetables are tender.
  6. Stir in the shrimp and cook for an additional 2-3 minutes, or until the shrimp are pink and cooked through.
  7. In a small mixing bowl, whisk together the soy sauce, honey, garlic, ginger, and black pepper.
  8. Pour the sauce over the shrimp and vegetables and stir to coat.
  9. Serve the stir-fry over the cooked wild rice mix.
  10. Garnish with additional chopped herbs or sesame seeds, if desired.
