Ingredients:

  • 1 cup organic wheat bran
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup mashed banana
  • 1/4 cup honey
  • 1 egg
  • 1 cup unsweetened almond milk
  • 1/4 cup chopped nuts, berries, or chocolate chips (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a muffin tin with muffin liners or grease with cooking spray.
  2. In a large mixing bowl, whisk together the wheat bran, whole wheat flour, baking powder, and salt.
  3. In a separate bowl, beat together the mashed banana, honey, egg, and almond milk.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. If using, stir in the nuts, berries, or chocolate chips.
  5. Scoop the muffin batter into the prepared muffin tin, filling each well about 3/4 full.
  6. Bake the muffins for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for a few minutes before removing to a wire rack to cool completely.
  8. Serve the muffins warm or at room temperature.
