  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Rinse the millet in a fine-mesh strainer under cold water.
  2. In a medium saucepan, bring the water and salt to a boil. Add the millet and reduce the heat to low. Simmer, covered, for 20 minutes, or until the millet is tender and the water has been absorbed.
