Hazelnuts are edible in their raw state, the kernel is around 2.5% water content when dried. They are harvested in mid-autumn and usually the majority of the harvest is not marketed as it comes from 'wild' hazelnut trees.
Hazelnuts are elongated with a rounded base, an outer fleshy husk (commonly called the "husk" or involucre), and a hard inner shell (or nutshell). The nut is formed from the floral disc, a pale yellow development ovule from the flower of the hazel. At maturity, it is 1.5–2 cm long and 1–1.5 cm in diameter, and has a thin, smooth skin, sometimes felted to a light gray on one side.
