Hazelnuts are edible in their raw state, the kernel is around 2.5% water content when dried. They are harvested in mid-autumn and usually the majority of the harvest is not marketed as it comes from 'wild' hazelnut trees.

Hazelnuts are elongated with a rounded base, an outer fleshy husk (commonly called the "husk" or involucre), and a hard inner shell (or nutshell).
