Organic Cacao Powder

Cocoa, native to Central America, has been consumed as a drink for thousands of years and was introduced to Europe in the 16th century where it has been widely popular due to its taste and nutritional value. Known as the superfood of the gods, or "Theobroma," cocoa is rich in antioxidants and has many uses in cooking and baking.

Organic cocoa powder is made from cocoa beans that are grown using organic farming practices and is an alternative to non-organic cocoa powder. It is made from dark, flavourful cocoa beans that are lightly roasted without the addition of sugar.

Cocoa powder is commonly used in baked goods like cookies, cakes, brownies, and granola bars to add a chocolate flavour. It can also be added to sweet dishes like rice pudding or savoury dishes like marinades for meat. Cocoa powder pairs well with spicy foods and can be used to make a mocha coffee by adding a tablespoon to the percolator filter.

Dry cocoa solids are the components of cocoa beans remaining after cocoa butter, the fatty component of the bean, is extracted from chocolate liquor, roasted cocoa beans that have been ground into a liquid state. Cocoa butter is 46% to 57% of the weight of cocoa beans and gives chocolate its characteristic melting properties. Cocoa powder is the powdered form of the dry solids with a small remaining amount of cocoa butter. Untreated cocoa powder is bitter and acidic. Dutch process cocoa has been treated with an alkaline to neutralize the acid.

Cocoa powder contains flavanols, amounts of which are reduced if the cocoa is subjected to acid-reducing alkalization
